apple pear cobbler with salted caramel sauce

Ingredients
  • Three large apples (I used honey crisp)
  • Two pears
  • ½ cup + two tablespoons granulated sugar
  • Juice from one lemon
  • ½ teaspoon + ⅛ teaspoon ground cinnamon
  • 1.5 cups all-purpose flour
  • ½ cup packed brown sugar
  • ¾ teaspoon sea salt
  • Two sticks unsalted butter, softened
  • Two eggs
  • ½ teaspoon vanilla extract
  • Two cups old fashioned rolled oats
  • ½ cup chopped pecans
Instructions
  1. Butter a 9x13 baking dish and preheat oven to 375 degrees.
  2. Chop the fruit in ½" pieces. I prefer to leave the skins on so the dish is more colorful, although you can peel them prior to cutting if desired.
  3. Sprinkle two tablespoons granulated sugar, ⅛ teaspoon ground cinnamon, and lemon juice onto fruit. Set aside.
  4. In a small bowl lightly whisk the two eggs and vanilla extract.
  5. In a large bowl sift together flour, brown sugar, remaining granulated sugar, salt, and remaining ground cinnamon. Then stir in the oats and chopped pecans with a wooden spoon. Stir in the (nearly melted) softened butter just until combined. Then stir in the egg and vanilla mixture. The mixture will be thick.
  6. Pour the fruit into the prepared baking dish. Then top dollops of the cobbler topping and spread out. Bake until lightly browned (about 25 minutes). Let cool slightly and top with vanilla ice cream and salted caramel sauce.
