salmon tacos
 
 
Ingredients
  • Corn tortillas
  • Pepper jack cheese
  • Black beans
  • Salmon filet
  • Garlic salt
  • ¼ teaspoon black pepper
  • Cumin
  • Cayenne pepper
  • Two cups finely sliced cabbage
  • ½ cup sliced bell pepper
  • ¼ cup sliced red onion
  • Three tablespoons olive oil
  • ⅛ cup rice vinegar
  • For garnish: sour cream, salsa, cilantro, chopped avocado, and sliced lime
Instructions
  1. In a large bowl combine two tablespoons olive oil, the rice vinegar, ⅛ teaspoon black pepper, and a sprinkle of salt.
  2. Add cabbage, bell pepper, and onion. Stir until combined. Set aside.
  3. Spread remaining tablespoon of olive oil on salmon filet and sprinkle with cumin, salt, black and cayenne peppers. Let marinate and grill according to your BBQ.
  4. Meanwhile, prep garnishes (sour cream, salsa, cilantro, tomatoes). Heat black beans.
  5. Begin to heat tortillas and melt pepper jack cheese.
  6. When the salmon is finished (it should be moist and flaky), assemble tacos with beans, salmon, cabbage slaw, and garnishes.
  7. Enjoy!
