That is precisely why I felt obligated to add spinach, in order to make myself feel a little more justified at indulging in a milkshake. In the middle of the afternoon. - One cup pumpkin puree
- ¾ teaspoon pumpkin pie spice
- Pinch of ground cinnamon
- One cup ice
- ¾ cup vanilla bean ice cream or yogurt
- ½ cup almond milk
- Two tablespoons mascarpone cheese
- One cup loosely packed fresh spinach
- Graham crackers for garnish
- Combine ingredients in a blender with liquids first, then solids, then ice.
- Blend until well combined and smooth.
- Pour into cups and sprinkle with graham crackers.
