We have a standing Taco Tuesday tradition in our house. When we set out on this tradition in May (inspired by Cinco de Mayo, of course) I was a little concerned we’d get bored after a few weeks. Actually, the opposite occurred: we’ve had a blast trying different combinations of spices, vegetables, and meat (with some enchiladas thrown in) and love how easy Tuesday dinner prep is. Salmon is an obvious choice given that we live in Alaska and my husband is an avid fisherman. (Do you want to see the pictures of Nate filleting this one? Because he told me to omit them.) Having always preferred white fish in tacos I was pleasantly surprised with how the salmon version turned out. The cabbage slaw is essential for crunch and flavor and this recipe allows the tacos to be as spicy or mild as desired. We prefer a little extra spice in our life and I happen to have a heavy hand with the cayenne pepper, so then I doused these in sour cream. If you’re not able to procure freshly caught Alaskan salmon (sorrrrry), try to buy wild caught, it’s well worth it. Then try these tacos, maybe next Tuesday, and enjoy!
- Corn tortillas
- Pepper jack cheese
- Black beans
- Salmon filet
- Garlic salt
- ¼ teaspoon black pepper
- Cumin
- Cayenne pepper
- Two cups finely sliced cabbage
- ½ cup sliced bell pepper
- ¼ cup sliced red onion
- Three tablespoons olive oil
- ⅛ cup rice vinegar
- For garnish: sour cream, salsa, cilantro, chopped avocado, and sliced lime
- In a large bowl combine two tablespoons olive oil, the rice vinegar, ⅛ teaspoon black pepper, and a sprinkle of salt.
- Add cabbage, bell pepper, and onion. Stir until combined. Set aside.
- Spread remaining tablespoon of olive oil on salmon filet and sprinkle with cumin, salt, black and cayenne peppers. Let marinate and grill according to your BBQ.
- Meanwhile, prep garnishes (sour cream, salsa, cilantro, tomatoes). Heat black beans.
- Begin to heat tortillas and melt pepper jack cheese.
- When the salmon is finished (it should be moist and flaky), assemble tacos with beans, salmon, cabbage slaw, and garnishes.
