What do you do with nearly over-ripe nectarines and nearly expired cream cheese? Make muffins, of course. I have been dreaming of this combination for a while now and am not disappointed! These muffins turned out seriously delicious. The almond flour and shredded coconut lend a subtle nutty flavor, each bite of juicy, sweet nectarine bursts with summer, and the (full fat) Greek yogurt ensures they are super moist. Everything together = summer muffin perfection. They make a lovely addition for brunch or as an indulgent afternoon snack.

{Ingredients}
1 1/3 cups all-purpose flour
2/3 cup almond flour
2/3 cup sugar
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/3 cup plain Greek yogurt
2/3 cup milk
8 tablespoons unsalted butter, melted
Two eggs
One teaspoon vanilla extract
1/2 cup shredded coconut
Two nectarines, diced in 1/2″ chunks
Six-eight ounces cream cheese
{Directions}
1. Preheat oven to 400 degrees. Prepare a muffin pan with either butter or liners. (I tried both for this recipe and think the non-liner version turned out better.)
2. In a large bowl combine flours, sugar, baking powder, baking soda, and salt. Stir with a fork.
3. In another bowl combine eggs, yogurt, vanilla extract, and milk. Stir with a whisk. Add the melted butter (not too hot!) and whisk until combined.
4. Pour the wet ingredients in with the dry ingredients and stir until just combined.
5. Fold in the nectarine chunks and shredded coconut.
6. Spoon two tablespoons into each muffin cup.
7. Place a 1-2 teaspoon size piece of cream cheese onto the batter.
8. Top the cream cheese with another two tablespoons of batter.
9. Bake for 20 minutes, or until golden on top.
10. Let cool on a wire rack for several minutes prior to taking muffins out.
This recipe made 20 muffins, however, I accidentally made a few that were small and subsequently devoured in a single bite by my husband. I think these are best served slightly warm so the cream cheese is gooey and delicious. Enjoy!
