I had been vying for a mini muffin pan for ages yet never had an excuse to just buy the dang pan. So when my husband and I received a surprise two year anniversary gift card to Williams-Sonoma, it seemed like a sign to use the card for just that. Of course I wanted to try it out immediately and began contemplating what mini muffin delicacy would make the perfect road snack for our upcoming trip. Mini coffee cake muffins won (can you believe they beat out raisin bran?) and were an excellent road snack: Two bites of sweet at any given moment. I used this recipe and, because I apparently always have to change something, used only 1/2 teaspoon vanilla extract and added 1/2 teaspoon of almond extract. Tasty.

Consensus: Buy a mini muffin pan this instant and begin baking adorable treats. Next I am going to try a savory mini muffin: Tomato and goat cheese. Yes, please.
