I used to spend my days creating much more time-consuming goodies. But then I had two children. Fortunately children could care less how beautiful and time-consuming a treat is, they just want it to look bright and colorful and have sprinkles! I am deep into little girl territory and have really embraced sprinkles on everything. I have to agree with Waverley– they do make everything more fun! When she saw these Unicorn Rice Krispie Treats her eyes grew huge with excitement and she said they were the most beautiful dessert she’s ever seen. I laughed, knowing they took approximately 10 minutes and because I am inclined to agree with her. These are perfect for last-minute gatherings or a party for littles. Or, two grownups participating in late-night snacking with a mini can of sparkling wine. Because I’m an adult and I like Unicorn Rice Krispie Treats with sprinkles, too.
PS I get all of our sprinkles from Sweetapolita. She has curated the best selection of sprinkles ever. I didn’t know that was a thing, but it is and it is really important in our family. I used camo sprinkles for Nate’s birthday cake, which would work for someone who does not care for all of the pink and purple in this recipe!
- 5 tablespoons unsalted butter, plus extra for greasing
- 12-14 ounces marshmallows
- 6 cups Rice Krispie cereal
- 12 ounces white baking chocolate broken into pieces
- Food coloring
- Sprinkles
- Prepare a 9x13" baking pan. Add a piece of parchment paper that is big enough to cover all sides of the pan. Use butter or spray to grease the paper.
- Melt butter over medium heat in a sauce pan. Add marshmallows. Stir frequently until marshmallows are melted.
- Remove from heat. Add cereal to marshmallow mixture. Stir until combined.
- Pour into the parchment paper and press with spatula or hand until flat and in all corners. Set aside.
- Prepare a double boiler. Melt chocolate and pour directly onto Rice Krispie treats. Use a spatula to spread evenly.
- Add food coloring (I used 3 drops of neon pink) into chocolate. Use a toothpick to create marveling effect but dragging it up and down in the chocolate until the color is semi-blended.
- Pour sprinkles onto chocolate. Shake a bit to ensure the chocolate is flat and the sprinkles are embedded in the chocolate.
- Refrigerate until chocolate is hardened, about an hour.
- Remove from parchment paper. Cut and serve! Creating shapes with a cookie cutter would also be a cute idea.

How did I not know about Sweetapolita?! Sprinkles are a staple in our house, but it’s nice to know we can order some more masculine ones as my Nate can use a little break from the girliness overload, too!!

Oh my word, you are welcome/I am sorry for telling you…you may never look at sprinkles the same again:) There’s also a pizza topping sprinkle set! Super cute and more masculine!
