Last week I was pretty deep in despair due to the passing of my sweet Charlie Boy and felt the need to bake. It was a rainy summer day, naturally, so I craved something sweet, delicious, and comforting. Isn’t baking and cooking so cathartic? And eating? I had these Nutella stuffed peanut butter cookies on my mind for a while so thought they’d be the perfect project to ease a little heartache. I planned to give most of these cookies to Charlie’s veterinarians…but…
We ate them all too fast. Every last one of them.
So. Sorry guys! Nate and I inhaled these delectable little treats as if they magically possessed curing powers to heal our hearts. They nearly worked.
I used a basic peanut butter cookie dough recipe and the rest was fairly simple. Just grab 1/4 cup size chunks of dough and roll into a ball. Then flatten the ball with your fingers and leave a nice thumb print right in the middle. Then, dollop a teaspoon size amount of Nutella into the middle. Bring the edges up and over the Nutella, pinching the dough together as you go to keep the Nutella safely inside. Then, sprinkle with sea salt. Bake at 350° for 16 minutes, so the Nutella is deliciously gooey and the cookie portion isn’t too crispy. Perfection.
