I’ve been feeling incredibly pressed for time lately. I realize that probably sounds ridiculous, but it’s true! I feel like I am barely keeping up sometimes (is this how the holidays are with a child??), which is why I’ve been leaning towards super easy everything…recipes in particular. This apple pear cobbler is perfect for baking in a rush. It’s easy and uncomplicated yet delicious, comforting, and festive. I am quite certain it is mandatory to sit in front of a fire and eat cobbler at least once during winter. So here’s your chance to do just that. This cobbler, which is heavy on the topping because it’s the most delicious part, is best served warm with a scoop of vanilla bean ice cream and drizzled with salted caramel sauce for extra indulgence. The salted caramel sauce pairs perfectly with the sweet pears and apples, which is also the best part because not enough fruit totally throws off the cobbler ratio. This is exhausting: it’s all the best part.
And, in the spirit of keeping things easy, how about prepared salted caramel sauce? Or, if you have a few extra moments, homemade.
- Three large apples (I used honey crisp)
- Two pears
- ½ cup + two tablespoons granulated sugar
- Juice from one lemon
- ½ teaspoon + ⅛ teaspoon ground cinnamon
- 1.5 cups all-purpose flour
- ½ cup packed brown sugar
- ¾ teaspoon sea salt
- Two sticks unsalted butter, softened
- Two eggs
- ½ teaspoon vanilla extract
- Two cups old fashioned rolled oats
- ½ cup chopped pecans
- Butter a 9x13 baking dish and preheat oven to 375 degrees.
- Chop the fruit in ½" pieces. I prefer to leave the skins on so the dish is more colorful, although you can peel them prior to cutting if desired.
- Sprinkle two tablespoons granulated sugar, ⅛ teaspoon ground cinnamon, and lemon juice onto fruit. Set aside.
- In a small bowl lightly whisk the two eggs and vanilla extract.
- In a large bowl sift together flour, brown sugar, remaining granulated sugar, salt, and remaining ground cinnamon. Then stir in the oats and chopped pecans with a wooden spoon. Stir in the (nearly melted) softened butter just until combined. Then stir in the egg and vanilla mixture. The mixture will be thick.
- Pour the fruit into the prepared baking dish. Then top dollops of the cobbler topping and spread out. Bake until lightly browned (about 25 minutes). Let cool slightly and top with vanilla ice cream and salted caramel sauce.
