It’s been two weeks since I’ve been back in Alaska and the transition after a long Oregon visit is always a tad rough for me, going from constant interaction with friends and family to nothing. This week I am trying to replicate some of the good times from our visit with modified versions available here in Alaska. I took Waverley to a music class, we’ve been going on lots of family walks in the snow, and I am decreasing my self-imposed cooking burden. I am not sure why I feel the need to cook a legit dinner every night when there is a freezer of leftovers, like this spicy peanut sweet potato soup. My week feels lighter already. Aside from the bliss of delicious leftovers, here is what is making me happy this week!

{A cozy Friday night in with our favorite sushi takeout. Anchorage has very few good restaurants, yet the best sushi I’ve ever had! We love Peter’s Sushi Spot, if you’re ever in the area.}
