My favorite after-dinner treat lately has been a few nuts, dried cranberries, and dark chocolate chips with sea salt. The sweet, salty, crunchy combo satiates my sweet tooth and tastes wonderful with a glass of red wine. When I saw a similar combination in the form of a scone at my favorite coffee shop I figured I should absolutely turn those ingredients into a scone as well. I’m glad I did because they turned out pretty delicious and, if you’re wondering, also go extremely well with a glass of red wine (especially while watching the second season of Orange Is The New Black!). The best part: these can be made, baked, and in your belly in about 30 minutes.
{Ingredients}
Two cups flour
1/2 cup sugar
One tablespoon baking powder
3/4 teaspoon sea salt (plus more for sprinkling)
Six tablespoons cold, unsalted butter
1 1/4 cups heavy cream
1/2 teaspoon vanilla paste
Three ounces chopped dark chocolate
3/4 cup dried cranberries
1/2 cup chopped hazelnuts
{Directions}
1. Stir together the flour, sugar, baking powder, and sea salt.
2. Cut the butter in with a pastry blender or two knives.
3. Use a wooden spoon to combine the heavy cream and vanilla paste in the flour mixture.
4. Stir in the chocolate, cranberries, and hazelnuts.
5. Pour dough onto a cold surface. Pat together into a circle about 1″ thick until it is no longer crumbly.
6. Cut into triangles.
7. Sprinkle with sea salt.
8. Bake at 425 degrees for 14 minutes.
